Gluten Free Banana Nut Muffins

Muffins are a go-to for kids! They are an easy snack to grab or put in your child’s lunch box. Muffins are typically packed with sugar, but this recipe is both nutritious and delicious.

Prep Time - 8-10 Minutes

Cook time - 10-12 Minutes

Serves - 26-28 Muffins

 

Ingredients:

2 Eggs

2 Medium Ripe Bananas

1 Cup of Nut Butter

2 ½ Tablespoons of Raw Honey

2 Teaspoons Of Vanilla Extract

1 Teaspoon of Apple Cider Vinegar

½ Teaspoon of baking soda

1-2 Cups of Crushed Nut Mixture

Directions:

  1. Preheat your oven to 375 degrees.
  2. Grease up your mini muffin tins!
  3. Mash up those bananas! Mix together the bananas, eggs and nut butter. Then add rest of the ingredients, raw honey, vanilla, apple cider vinegar and then baking soda for an easier mix.
  4. Scoop a spoon of the mixture into each mini muffin tin mold. The add crushed nut mixture of your choice onto the top.
  5. Bake these for about 12 Minutes or until the dough is fully cooked to your liking. Enjoy!
