    Cucumber Shamrock Sandwiches
Tea time, anyone? These dainty little tea-party-inspired bites are as pretty as they are tasty.
You’ll need:
- Four slices of bread/two English muffins
 
- Cream cheese, at room temperature
 
- A dozen thinly sliced cucumbers, plus one long, thin piece of peel for each sandwich
 
Method: 
- Toast the bread.
 
- Spread a thick layer of cream cheese onto each piece of toast.
 
- Arrange cucumber slices on top of the toasts in a shamrock shape.
 
- Add a slice of pepper or cucumber peel at the bottom to make the “stem.”
 
- Garnish with cilantro or parsley and serve open-faced.
