by Jenna Gleason

This is a great Mac N’ Cheese slow cooker recipe, your kids are sure to love. Adding broccoli is a healthy technique to incorporate daily vegetables, but also transforms ordinary Mac N’ Cheese into a celebratory meal for St. patty’s day! This easy, cheesy, baked goodness will be any kids new favorite.

Ingredients:

12 oz Can Evaporated Milk

1 Pint Milk

14 oz Medium Cheddar Cheese

7 oz Monterey Cheese

¼ Cup Butter

Broccoli

24 oz Bag Elbow Pasta

Seasoning (Salt, Pepper, Paprika, Cayenne Pepper)

Directions:

  1. Place the crock pot on slow cook. Pour in uncooked elbow pasta.
  2. Shred the cheddar and monterey cheeses and place on top of the pasta. Measure ¼ stick butter, cut into cubes, and place on top of the cheese.
  3. In a separate bowl, mix together the evaporated milk and milk. Then, pour in a circular motion over the cheese, pasta and butter.
  4. Mix well and press the noodle and cheese mixture into the liquid mixture as much as possible.
  5. Set a timer for 2 hours. After one hour mix  together the noodles and cheese and then place in the broccoli.
  6. It should be done after 2 hours but depending on the noodles and milk, it may take another 30 minutes max. Serve hot and enjoy!
